Apple Cinnamon Wontons A La Mode

by Irene Lindvall

Happy nine year anniversary to Eric and I! We had a great day out and had breakfast together and the best sushi dinner at Shiro's tonight. I've known it for awhile, but I'd have to say it's the best sushi in Seattle. As a result of all this eating out I planned a dessert. The instructions are very easy and I used about two teaspoons of mixture per wrapper. The instructions did not say to turn the wontons over so when I checked on them at 13 minutes I decided to turn them over the remaining two minutes then cooked it for an additional minute. They were definitely crispy, but not inedible. Loved the powdered sugar and of course the ice cream. I should note that I sampled the apple mixture pre-bake and it was delicious but it strangely didn't taste as good after bake.

Things I learned from this recipe:

I'm reminded that I need to do make another recipe with apple-cinnamon chips.

Do NOT serve without ice cream.

Roasted Potato and Green Bean Salad

by Irene Lindvall

This recipe was super easy to make and I really enjoyed all the flavors. I failed to noticed the potatoes wanted 45 minutes in the oven and I was a little short on time today, but it was worth the wait. These were fresh from the farmer's market and they were delicious. I had to substitute fresh cherry tomatoes for sun-dried ones because the ones I had in the refrigerator had gone bad. The substitution was perfectly fine and I think I actually prefer the the fresh ones. Nice little lunch!

Things I learned from this recipe:

I need to be roasting potatoes more often.

Shrimp, Lemon & Spinach Whole-grain Salad

by Irene Lindvall

I turned this salad into a dinner entree by giving us each a few more shrimp (about 1/2lb/person). I think I may have goofed on the seasoning levels and didn't add enough, but we both found it spicy from the chili flakes, but otherwise lacking flavor. I liked the creaminess from the greek yogurt as well as the bites that had mint in them. Overall, a decent dish that would probably be good for a large group served with smaller shrimp.

Things I learned from this recipe:

This recipe had 9.3k shares off of the myrecipes website.  Pretty amazing.

I added another half a cup of spinach (no sauce) at the bottom of each plate.

Baja-Style Fish Tacos w/Salad & Chili-Lime Sauce

by Irene Lindvall

I had high hopes for this dish, but as with many Weight Watchers recipes that turn traditionally fried pieces of food into baked ones, it wasn't the greatest. I had to use cod because I couldn't find snapper at the store, but snapper would not have saved this dish. The masa flour was interesting to work with and tasted fine, but the corn flour plus the corn tortilla seemed like overkill. I liked the salad as well as the chili-lime sauce. I liked combining the chills in adobo sauce with low-fat yogurt instead of mayonnaise like most other recipes. I have to admit, it probably would've tasted better deep-fried, sorry Weight Watchers.

Things I learned about this recipe:

What yellow masa corn flour is.

Bucatini w/Shrimp & Spicy Cherry Tomato Pan Sauce

by Irene Lindvall

The weather has turned for a few days so I thought a nice warm pasta dish sounded great. I used fresh whole wheat pasta from Whole Foods and also used more than a pinch of the red chili flakes like the recipe recommends. The result was a fairly spicy delicious pasta dish. I liked that the sauce for the dish was just the olive oil and tomato juices. The feta added a nice creamy texture to the dish, and I couldn't add enough fresh basil. Isn't the color of the dish wonderful?

Things I learned from this recipe:

I forgot how much I loved the smell of garlic and tomatoes cooking together.

Fresh whole wheat pasta seems a lot less dense than boxed pasta.
