This recipe was super easy to make and I really enjoyed all the flavors. I failed to noticed the potatoes wanted 45 minutes in the oven and I was a little short on time today, but it was worth the wait. These were fresh from the farmer's market and they were delicious. I had to substitute fresh cherry tomatoes for sun-dried ones because the ones I had in the refrigerator had gone bad. The substitution was perfectly fine and I think I actually prefer the the fresh ones. Nice little lunch!

I need to be roasting potatoes more often.
