Tuna Poke

by Irene Lindvall

I've tried this recipe a couple of times and really love it. There isn't much to learn from this one other than not overdoing any of the ingredients. I might even suggest a little less of the soy sauce and other liquids just to have a little more flavor of the fish, but that is my personal taste. Tonight I served it with gyoza, soup and rice.

Things I learned from this recipe:

Don't overdue the cilantro.

Guacamole

by Irene Lindvall

I was hesitant about sharing this recipe because I like to claim it as my own, but then realized I want everyone to make great guacamole. There are a lot of subpar recipes out there. I know, because I've tried many of them. What makes this recipe the best in my book are the spices. Most include onion, tomatoes and cilantro, but it is the cayenne pepper and cumin that bring this recipe to the next level.

Fun tip: I can't recall where I learned this from, but I leave the pit in the bowl to keep the color green. It really works and it always provides fun conversation at parties.

Things I learned from this recipe:

Don't leave out any of the ingredients. I've done this before and it was disappointing.

I also do not like to over do it on the lime juice.

Would I make this recipe again?:

For the rest of our lives.

Minestrone Soup

by Irene Lindvall

Soup, soup, and more soup - it's really all I feel like eating because it's so cold outside. This recipe is probably the easiest thing I've ever made (aka thrown together). I literally popped open some cans, chopped up the bell pepper and threw them in the dutch oven. I chose to cook up some chicken and added it later since we ate this for dinner. I liked the Italian seasoning that was used but would probably add more if I made it again, but considering how little effort it took to make it I'm satisfied with the outcome.

Things I learned from this recipe:

Seasoning is key in making a soup excellent.

Would I make this recipe again?:

Probably

Tofu and Vegetable Curry with Rice

by Irene Lindvall

I enjoy Thai food a lot but haven't made much of it at home. There were many firsts in this recipe for me: first time cooking with coconut milk, okra, and thai curry paste. That said, it was all very easy to put together but more importantly to me, it all made sense. I love understanding how something is made and how the flavors come to be, and the paste plus the coconut milk were the underlings of this recipe. I really enjoyed this dish.

Note: I used chicken broth instead of vegetable because I had a container open, and I also added sriracha on top because it wasn't quite spicy enough.

Things I learned from this recipe:

Don't forget to top it with the basil!

My spice tolerance is a little out of control.

Would I make this recipe again?:

Yes

Caprese Skillet Eggs

by Irene Lindvall

I had planned on brunch today but it quickly turned into "lunner" - the meal between lunch and dinner. We both had the lemon pound cake for breakfast and we just didn't get around to eating lunch so we had this meal in its entirety around 3pm. I kept thinking it needed more flavor but the title of the recipe reminded me it's supposed to have that fresh ingredient taste. Eric really enjoyed it and liked the lightness of it. The fresh three herb blend added to the top was delicious.

Things I learned from this recipe:

Hot sauce could easily be added.

I should learn how to make bread.

Would I make this recipe again?:

Definitely
